Bonefish Grill's Bang Bang Shrimp

Ingredients
- 1/2 C mayonnaise
- 1 T hot sauce
- 1/3 C sweet chili sauce
- 1 t rice wine vinegar
- 1/2 C cornstarch
- 2 ea eggs, beaten
- 3/4 C all-purpose flour
- 1/2 C panko bread crumbs
- 1/4 t onion powder
- 1/4 t garlic powder
- 1 lb shrimp, peeled and deveined
Instructions
- Whisk together the mayonnaise, hot sauce, chili sauce and vinegar for the dipping sauce, then cover and refrigerate.
- Set up a three-stage dredging station: cornstarch; eggs; and, flour, panko, salt, pepper and spices.
- Run the shrimp through the dredging stations, then refrigerate for 20 minutes.
- Fry the shrimp in 350 oil until golden brown, then drain on paper towels.
- Plate and serve with the dipping sauce.
